Having rested decently yesterday, I woke up early today feeling much improved. But since I'm going out tomorrow, I didn't want to overdo things (yes, this is what I should aim for anyway. I try.) I made the double batch of lemon-lime curd (which may be simple but yeesh, it dirties a lot of equipment. Plus, my coordination suffers as I tire and I wind up flinging bits of sugary mess all over the place), trimmed my hair, put some clothes away, made some crepes for afternoon tea and Chicken Piccata with Fried Capers and salad for dinner.
Okay, firstly, the proportions of this recipe strike me as bizarre. I split one large chicken breast (it was huge, actually, and Mum said it was one of the smaller ones! I worry about those chickens) between two people and I still couldn't finish my piece. I used about 3 tsps (1 US Tbsp) of capers because that's what I had, reduced the butter a bit further and didn't use poultry seasoning (what's that?) Otherwise, I kept the same measurements.
And it was really good! It's been a surprisingly long time since I cooked chicken breast and I was thinking, shit, I don't remember what it should look like/feel like! But it turned out lovely and juicy. The sauce was sharp and tangy, mellowed just a bit by the honey.
And the capers ... for a long time, I associated capers with such things as smoked salmon and anchovies, so I avoided them out of reflex. Since I realised that hey, they can go with other foods too, I've tried them a couple of times. My only recollection is that they weren't as scary as I thought. Tonight? I'm not sure if I like them but they have an interesting flavour, if that makes sense? (Mum gave me an odd look, then said, yes, she could understand that.)
Also today, I (with Mum's assistance) wrestled my mattress topper (it is amazingly heavy) out to the clothesline to air. It needs a bit more time but we can't put it out tomorrow because we are going out.
TO THE ZOO!!!
I haven't been to Taronga in years. Ten years, maybe? I wanted to go last year, in the spring before it got too hot but somehow it never quite happened. But we are going tomorrow! Looking at the website, they have what seems like a pretty good disability access map, showing the gentle paths and steep slopes (some parts are very steep), stairs, lifts, heavy doors, etc, so I've been able to plan quite well. We'll start from the top, wander our way down and take the cable car back up.
Also, it seems like all the Australian animals are down one side, the exotics down the other. All due respect to our native fauna, but we have possums tap-dancing on the roof, bandicoots digging up the lawn, I think there was a wallaby thumping around the bush a few nights ago and we had a domesticated dingo jump into our back yard some months back. I think I'll look at the animals that are less likely to arrive in our garden.
I also want to get a good look at the tiger, any owls and the Kodiak bear for fic purposes. *facepalm* They don't have any bobcats, wolves, raccoons, puma or elk though.
